Featured Recipe
Roast Pork Tenderloin with Crushed Baby Red Potatoes and Greens
|
Ingredients:
1 pound greens. You can use a combination of collards, Swiss chard, mustard, or just one.
2 garlic cloves, pressed
1/2 cup lowfat buttermilk
2 Tablespoons olive oil
1/4 teaspoon fresh cracked pepper
1 pound pork tenderloin, trimmed of fat
2 pounds baby red potatoes
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon salt
Directions:
To prepare pork:
Rinse and pat dry, trim fat. Rub with 1 tablespoon of olive oil. Season with salt, pepper and rosemary. Place in a baking dish and roast in a 425° oven for 25 to 30 minutes (until juices run clear and meat thermometer reaches 170°)
To prepare potatoes and greens:
Remove stems and wilted or yellow leaves from greens. Wash leaves well and chop into 1 inch pieces. Set aside. Scrub potatoes, cut into chunks, place in a large saucepot and cook in boiling water until tender (about 15 minutes). Remove from pot to a large bowl with a slotted spoon. Crush with the back of a wooden spoon or a potato masher. Set aside. Add the greens to the boiling potato water and cook until tender (about 2 to 3 minutes). Drain and set aside. Dry the pot and return to medium heat. Heat the remaining 1 tablespoon of oil and add the pressed garlic. Saute about 1 minute. Add the cooked greens and toss with the garlic. Stir in the potatoes and buttermilk. Season with fresh cracked pepper and a little salt.
To Serve:
Remove roast from oven, let stand 2 to 3 minutes. Slice into medallions. Plate and serve with potatoes and greens.
